In a food processor, add walnuts + almonds + cocoa powder. Blend in short bursts until coarse.
Add vanilla flavoring + dates and blend in short bursts until the mixture is sticky and clumpy.
Scoop about 2 tablespoons of the mixture and roll it into a ball. Repeat until you have about 10 balls.
Notes
Not a fan of raw cacao? Feel free to use cocoa powder in this recipe instead. You can also add other ingredients to customize the flavor and texture, such as mixed nuts, seeds, and dried fruits.
