Instructions
Heat a sauce pan over low-medium heat. Add olive oil.
Once it's hot, add bay leaf, cinnamon stick, garlic cloves, and onion.
Stir and saute for 3-4 minutes or until the onions turn golden brown.
Add the green peas and give it a quick stir. Then add 1 cup water and cover the pan with a lid.
Cook for 5 minutes over low-medium heat.
Add mint leaves and stir and cook for another minute.
Turn off the heat, remove and discard the bay leaf + cinnamon stick and transfer the mixture to a blender.
Blend until creamy.
Transfer the creamy sauce back to the sauce pan. Add salt, pepper, 1/4 cup water and coconut cream. Mix well to combine. Reheat and serve.
