Creamy Minty Pea Soup

My favorite pea soup gets a minty twist and now I have to make this every week – It’s that good!

If you’re like me and have already started prepping winter soups, you might want to give it a try. You’ll only need 8 ingredients and 10 minutes to prep this delicious, creamy, minty, hearty pea soup.

I couldn’t find fresh peas at my local groceries so I have used frozen in this recipe. However, you can use fresh ones too.

Of course, you can add coconut cream (or water) to change the consistency. I like it thick and creamy, so I tend to add less water.

Ingredients

Instructions

  1. Heat a sauce pan over low-medium heat. Add olive oil.
  2. Once it's hot, add bay leaf, cinnamon stick, garlic cloves, and onion.
  3. Stir and saute for 3-4 minutes or until the onions turn golden brown.
  4. Add the green peas and give it a quick stir. Then add 1 cup water and cover the pan with a lid.
  5. Cook for 5 minutes over low-medium heat. 
  6. Add mint leaves and stir and cook for another minute.
  7. Turn off the heat, remove and discard the bay leaf + cinnamon stick and transfer the mixture to a blender.
  8. Blend until creamy.
  9. Transfer the creamy sauce back to the sauce pan. Add salt, pepper, 1/4 cup water and coconut cream. Mix well to combine. Reheat and serve.
