Rice Paper Rolls


I am new to rice papers. Never thought I would be able to soak them (properly) and then have them rolled. But I pretty much nailed it on my first try. 😉

Filled it up with whatever salads I had with me + fried tofu slices. Then I made almond sauce for dipping. It was YUM!

Ingredients

Preparing tofu filling:

  • 1 tablespoon soy sauce
  • 1/2 teaspoon chilli flakes
  • 1/2 teaspoon oregano
  • Salt and pepper
  • 1/2 tablespoon extra virgin olive oil
  • 250 gm. (9 0z.) tofu slices

Preparing almond sauce:

  • 4 garlic cloves
  • 1/2 inch ginger
  • 1 tablespoon water
  • 1/2 tablespoon soy sauce
  • 1 teaspoon extra virgin olive oil
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/2 tablespoon lemon juice
  • 2 tablespoons almond butter (or peanut butter)

Preparing rice paper roll:

  • Rice papers
  • 2 cups warm water

Salads:

  • Shredded cabbage
  • Thinly sliced bell pepper
  • Thinly sliced cucumber
  • Thinly sliced carrot
  • Coriander / cilantro leaves

Instructions

  1. To prepare tofu filling, add all the filling ingredients (except tofu) in a medium-large bowl. Mix well and add the tofu slices. Coat well and set aside for about 10 minutes.
  2. To prepare almond sauce, add all the sauce ingredients to a blender and blend until smooth. Set aside.
  3. Time to fry the tofu. Heat a pan/skillet over medium heat. Add 1 teaspoon oil. Once hot, add the marinaded tofu and fry them on all sides. (I use tongs to turn the tofu. This normally takes 8-10 minutes). Set aside.
  4. Now lets get ROLL-in'. Fill a large bowl with 2 cups of warm water. Submerge the rice paper into the water for 10-15 seconds then take it out when flexible.
  5. Lay the paper flat on a dry board (I used a dry kitchen towel for this). Place 2 tofu slices and salads in the center-bottom of the paper. Roll the paper carefully as it tends to stick with the board. Tighten the ends. Your roll is ready. Dip it in the almond sauce and serve.
