Matcha Pancake

I’ve been enjoying Matcha not just with my tea, but also with my pancakes. This delicious Matcha Oat Pancake is gluten-free, requires only 7 ingredients, and is super easy to put together.

To help the ingredients bind together, I used flax egg (1 tablespoon flax meal + 3 tablespoons water).

I also added a bit of vanilla essence for that extra kick of flavor.

I’m a big fan of soy milk, so I used it for this recipe. You can use your fav plant-based milk just fine.

The preparation, as mentioned, is really easy. Combine dry and wet ingredients together, mix well until the lumps disappear and the batter gets smooth.

Pour the batter onto a non-stick pan over low-medium heat. Once it’s ‘bubbly’, flip the pancake and cook for about a minute.

If your batter starts thickening, specially during your 3rd or 4th pancake, worry not! It’s the oats flour absorbing liquid.

Just add a splash of milk, give it a quick stir, and you’re good to go.

And that’s it. Matcha Pancake is ready. Top it off with your fav fruits, drizzle your fav pancake/maple syrup and serve.

  1. In a small bowl, combine flax meal + water. Set aside for 2 minutes.

  2. In a large mixing bowl, add the dry ingredients: Oat flour + sugar + baking soda + matcha tea + salt. Mix well and add wet ingredients: Flax egg + vanilla essence + soy milk.

  3. Stir and combine until the lumps are gone and the batter is smooth.

  4. Set a non-stick pan over medium heat. Pour around 1/2 cup of batter to the pan and let it heat for 2 minutes, or until it's 'bubbly'. Flip and cook the other side for 1 minute.

  5. Matcha pancake is ready. Top it off with your fav fruits and serve.

  1. To prepare oats flour, simply blend rolled oats in your blender.
  2. To prepare flax meal, simply blend flax seeds in your blender.
