Matcha Hazelnut Chocolate Cookies

Matcha Hazelnut Chocolate Cookies

Greetings, fellow cookie lovers! I’ve got an exciting recipe to share with you today – Matcha Hazelnut Chocolate Cookies.

These cookies are a true delight for the taste buds. The combination of nutty hazelnuts, earthy matcha, and rich chocolate creates a flavor that is truly something else. They’re also incredibly soft and chewy on the inside, with just a hint of crunch on the outside.

But the best part about these cookies is that they’re SO easy to make. With just simple ingredients, you can whip up a batch in no time. The preparation is also a breeze – just mix everything together, roll the dough into balls, and bake until they’re done.

Let’s go!

Ingredients

Instructions

  • In a large mixing bowl, add muscovado sugar + powdered sugar + coconut oil + soy milk. Mix well until the sugars are dissolved.
  • Using a sieve, add all-purpose flour + baking powder + baking soda + salt + cardamom powder + matcha powder to the mixing bowl.
  • Using a spatula, gently fold and mix all the ingredients together until the 'batter' is well-combined (see video for reference).
  • Next, add hazelnuts + dark chocolate and fold some more.
  • Now scoop around 2 tablespoons of this mixture (I used an ice-cream scoop) and transfer to a parchment/silicone lined baking sheet.
  • Repeat the same for the remaining batter. This recipe makes around 16 cookies so you might have to do this with multiple baking sheets.
  • Transfer the sheet(s) to your fridge and let the cookies chill for about 1 hour.
  • *After an hour* Transfer the baking sheet to a preheated oven and bake at 180 C (356 F) for 18 minutes.
  • Once baked, transfer the cookies to a wire rack (careful, they're super soft while hot) and let them cool. You can now bake the remaining batches - if any.
  • Matcha Hazelnut Chocolate cookies are ready. Serve hot or chilled with your fav plant milk. 🙂
