Easy Vegan Fried Rice

Makes a great lunch or dinner!

Ingredients

  • 1.50 tbsp Olive Oil
  • ½ tsp Cumin Seeds
  • ½ cup chopped Green Beans
  • 5 Garlic Cloves - chopped
  • 1 Onion - sliced
  • 3 cups cooked Basmati Rice
  • ½ cup steamed Corn Kernels
  • ½ cup chopped Carrot
  • 1 Green Bell Pepper - chopped
  • ½ cup Green Peas
  • 1 chopped Chilly
  • ½ cup chopped Spring Onion
  • Salt, adjust to taste

Instructions

  1. Heat a skillet/wok/frying pan over medium heat settings. Add olive oil.
  2. Once hot, add cumin seeds. Once they start to darken, add the chopped green beans. Stir and saute for 2 minutes.
  3. Add the chopped garlic and sliced onion. Stir and fry for 1-2 minutes or until fragrant.
  4. Add the cooked Basmati rice, steamed corn kernels, chopped carrot, chopped bell pepper, green peas, and chopped chilly. Stir and mix well.
  5. Cook under low-medium heat for 3-4 minutes (with the lid-off). Then sprinkle the chopped green onions and salt. Stir well and serve.
