One of the first cookies I tried after going vegan and it still surprises me. This 4-ingredients no-fuss banana oats cookies can be yours under 25 minutes (and that includes baking).

The procedure is so simple. Mash the bananas, mix all the ingredients, give it a shape of a cookie and let it bake.

If you don’t like the extra sugar, you can skip the maple syrup and use ripe bananas instead.

After mixing everything up, I let it sit (preferably in the fridge) for 10-15 minutes.

This helps oats absorb the flavors of bananas and cinnamon.

Then I let it bake for 12-15 minutes. And just like that, you made yourself soft, mushy, sweet, and delicious banana oat cookies.

This recipe is also extremely customizable. You can add your favorite dried fruits (like raisins, plums, cranberries) or even nuts (like cashews, peanuts, pistachios) and so on. 🙂

  1. Mash the bananas in a large bowl using a fork (or a potato masher).

  2. Add maple syrup, rolled oats, and cinnamon. Mix well and let it sit in the fridge for 10 minutes.
  3. Scoop out 2 tablespoonfuls of the mixture and pour them in a parchment-lined baking sheet. Give it the shape of a cookie. Repeat the same for the remaining mixture.

  4. Transfer it to your oven and bake it for 180 C (350 F) for 15 minutes. Your banana oat cookies are ready!

  1. Depending upon the size of the cookie, you should be able to make 8 to 10 cookies.
  2. You can store the cookies in the fridge (air-tight container) for 3-4 days.
  3. You can use extra ripe bananas and skip the maple syrup if you want.
